Cold Zucchini Pasta With Avocado Sauce


  • 2 large zucchinis
  • 2 ripe avocados
  • handful fresh basil leaves
  • 1 tsp garlic powder
  • kosher salt and black pepper, to taste
  • 4 Tbs olive oil
  • 1 jar of roasted red peppers
  • parmesan cheese to taste


Cut zucchini into thin, noodle-like strips (a veggetti is ideal )

To make the avocado sauce, combine avocados, basil, garlic, salt and pepper (to taste) into a blender or food processor. Add olive oil with the motor running until all combined.

In a large bowl, combine pasta, avocado sauce, top it with chopped roasted red peppers and parmesan cheese.
