Chocolate Protein Muffins

INGREDIENTS

  • 4 egg whites
  • 1/4 cup milk
  • 3/4 cup plain yogurt
  • 1/2 cup melted coconut oil
  • 1 cup whole wheat flour
  • 2 scoops protein powder
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup brown sugar
  • 2 tsp pure vanilla extract
  • 1 tsp baking powder
  • 1 tsp baking soda
  • pinch salt
  • 1 cup dark chocolate chips

PREPERATION

Preheat oven to 350 degrees F.

In a large bowl combine flour, cocoa powder, protein powder, sugar, baking soda, baking powder, salt, protein powder.

In another bowl whisk together the coconut oil, egg whites, milk, yogurt and vanilla extract.

With a rubber spatula fold the wet ingredients into the dry ingredients and stir only until the ingredients are combined. Divide batter among muffin cups (I used an ice-cream scoop). Top with chocolate chips .

Bake for about 20 minutes. Check them towards the end of baking. They are done when they are firm to the touch and a toothpick inserted in the center of a muffin comes out clean.
